Alternative Names: Sometimes incorrectly labelled as Turbot

Monterey Bay Recommendation: All fisheries are classified as Good alternative or best choice. Alaskan caught fish are best.

Uses in Cooking: This very soft fish will not stand up to aggressive cooking methods. It should only be baked or broiled briefly.

Similar Fish: Petrale Sole, Gulf flounder, Rex Sole

Description: This is a very delicate meat with small flakes. It degrades very quickly due to a common parasite that breaks down its flesh so freshness is key.

Fun Facts: This is the most common fish in the gulf of Alaska. Flounders can either be right eyed or left eyed, with reference to which side of their head their eyes end up on. Arrowtooth are right eyed flounders.
