Bigeye Tuna

Alternative Names: Ahi

Monterey Bay Recommendation: Avoid from most sources. Good alternative from US Atlantic Greenstick method and from Hawaii Eastern Pacific Deep set Long lines. .

Uses in Cooking: Sashimi is the primary way this is served, but it can be seared, grilled, or broiled.

Similar Fish: Yellowfin tuna, Blackfin Tuna, Bluefin Tuna

Description: This deep red meat has a moderate flavor with meaty large flakes that cook up light brown. The flavor is succulent and interesting.

Fun Facts: Bigeye tuna cannot pump water over their gills. Instead they must swim with their mouths open and if they are still for too long, they will suffocate. Their gills are extremely efficient and their hearts are about 10 times larger than most fish which allows them to distribute oxygen from their gills extremely well.
