Alternative Names: Sablefish, Butterfish

Monterey Bay Recommendation: All fisheries are classified as Good alternative or best choice.

Uses in Cooking: This soft fleshed fish does not stand up well to aggressive cooking methods. It should be poached, baked, or gently sauteed.

Similar Fish: Amberjack, Salmon, Swai - There is really no great substitute for this unique fish.

Description: This fish is soft and delicate, almost gelatinous unless cooked perfectly. It is mild flavored and pure white with medium flakes.

Fun Facts: Nutritionally similar to salmon with a high fat content. Some specimens have been reported to live almost 100 years.
