Monterey Bay Recommendation: Black drum caught in the U.S. Gulf of Mexico with trotlines is a "Good Alternative." The data that's available suggests the stocks are stable. However, management effectiveness is a concern because most Gulf States haven't formally assessed black drum.

Uses in Cooking: This extremely firm, coarse flaked fish can be baked, broiled, or grilled.

Description: The flavor is sweet and mild. The large flakes hold together well, especially when cooked with skin on.

Fun Facts: Can create a deep, loud mating call. These fish have a strong bite, capable of crushing oyters.
