Uses in Cooking: Pan sear, grill medium rare, or bake covered. This fish is lower in oil than other salmon and needs to be cooked more quickly to avoid drying out.
Similar Fish: Coho salmon, king salmon, rainbow trout
Description: This meat is the least firm of all the salmon, but still has the large flakes that separate easily. With lower oil content, the flavor is less pronounced that most salmon.
Fun Facts: Some chum salmon migrate over 2000 miles up the Yukon River. Their young can take more than a year to make the journey back to the sea.
