Monterey Bay Recommendation: Cobia caught in the U.S. Atlantic and farmed in closed tanks is a "Best Choice." Cobia from the U.S. Gulf of Mexico is a "Best Choice" when caught with handlines and a "Good Alternative" when caught with longlines. Don't buy farmed cobia from Panama.
Uses in Cooking: Can be grilled, broiled, or sauteed.
Similar Fish: Swordfish is texturally similar, but Cobia is really unique and there is no great substitute.
Description: This fish is nutritionally similar to salmon and has a pronounced, but pleasant flavor. The meat is steaky and extremely firm, more like pork than other fish.
Fun Facts: Cobia are closely related to remoras, the fish that are often seen suctioned onto larger fish like sharks.
