Monterey Bay Recommendation: Recirculating aquaculture system farmed Coho are a best choice, as are Alaskan fish from drift gillnets, purse seines, and trolls. Otherwise, look up your specific origin as there are many options.

Uses in Cooking: This fish can be cooked any way but deep fried. It has enough oil that frying makes it too oily. If you want sashimi, pick a different salmon.

Description: This is a more mild flavored salmon and the taste is clean and rich. It is firm with large flakes and light pink in color when cooked.
