Alternative Names: Hog Snapper

Monterey Bay Recommendation: Spear fished hogfish from the US gulf of Mexico are a best choice.  Line caught from US gulf of Mexico and spear fished from South Carolina are good alternatives.  Avoid others.

Uses in Cooking: This fish can be pan fried, deep fried, baked, grilled, sauteed, or broiled.

Description: The meat of this fish is firm and sweet, with a flavor that is unique but subtle.  This fish is prized by spear fisherman for it's taste and unique appearance.  It is rarely commercially available.  It is said only half jokingly that this is because fisherman keep these all for themselves.

Fun Facts: The most interesting thing about this fish is its appearance, punctuated by the long snout which gives the fish its name.  Hogfish use this snout to dig out crustaceans buried in the sediment.
