Monterey Bay Recommendation: No recommendation.  Rarely sold in US except in the pet trade for aquariums.  Available in the Caribbean and not overfished.

Description: The meat of this fish has a texture like chicken breast and a similar color.  The flavor is buttery and remarkable, however, it has a small gall bladder which is obscured by the hard shell.  If this is not removed, it can be bitter.

Fun Facts: This fish is covered entirely by a bony shell, much like an insect or crab.  The shell can be split and the meat cooked in the shell like a bowl.
