John Dory

Monterey Bay Recommendation: No recommendation. Rarely available in the US. These fish are potentially vulnerable, but are rarely targeted and are usually taken as bycatch. Avoid immature sized fish under 14 inches as they will have not had a chance to breed.
Uses in Cooking: This fish has very low oil and can dry out in many cooking methods. These are generally sauteed, steamed, fried, or poached.

Description: The flesh is mild, but sweet and naturally has an almost smoky quality. It is firm and flaky and bright white.
Fun Facts: This fish has binocular vision and depth perception with both eyes on the front of its head as opposed to the sides like most fish.
