Lake Trout

Alternative Names: Mackinaw, Lake Char

Monterey Bay Recommendation: Trout farmed in the U.S., farmed in closed tanks or caught in Lake Superior’s Minnesota waters is a "Best Choice." Then look for a "Good Alternative," but know that these sources have environmental issues. Say "No, thanks" to trout caught in Lake Superior’s Wisconsin waters.

Uses in Cooking: Most commonly grilled, baked, or smoked.

Similar Fish: Coho Salmon, Arctic Char, Rainbow Trout

Description: The white to pink flesh of this fish is firm and flaky. It is less flavorful than salmon, but still has a pronounced oily flavor.

Fun Facts: Though lake trout are what many people think of as a typical trout, they are actually a freshwater char. They were once commercially very important, but declining stocks and increased regulation have diminished that.
