Monterey Bay Recommendation: No specific recommendation, but seafoodwatch generally recommends against buying most sharks. There is a small commercial fishery for these, and a strong recreational fishery. These fish are slow growing and slow to reproduce. They also accumulate mercury, so consume rarely if at all.

Uses in Cooking: Stands up to long cooking times which makes it work great in fish stews and curries. It can be grilled, poached or fried.

Similar Fish: Swordfish, cobia, wahoo

Description: This extremely firm, coarse textured flesh doesn't really flake. The flavor is mild, with a faint ammonia smell that usually cooks away.

Fun Facts: These fish hatch from an egg inside the uterus and then grow inside while consuming the yolk of the egg.
