Monterey Bay Recommendation: Look for wahoo ("sawara" in sushi) caught in the U.S. Atlantic with handlines, trolls or poles. Then look for a "Good Alternative" from the U.S., but know that these sources have environmental issues. Say "No, thanks" to imported wahoo.

Uses in Cooking: These are served seared and grilled, often with soy ginger or macadamia crusted. They can also be baked, broiled, or poached.

Description: These are mild flavored with large circular flakes. The meat is white and more oily than typical whitefish, but less oily than mackerel.
