Uses in Cooking: These are softer than many of the other rockfish and need to be handled gently. They will not survive multiple flips or high heat deep frying. They can be baked, broiled, or gently sauteed.

Similar Fish:  Rex sole, Vermilion Rockfish, Pink Grouper

Description: These are not as highly regarded as other rockfish, with a very mild, even boring flavor and a soft flesh.

Fun Facts: These fish are known for carrying a small parasitic worm that can be off-putting for some diners. They are not dangerous to humans and they can be removed or eaten along with the fish. Most people will never notice them.
