Uses in Cooking: Most of these fish are canned, smoked, or salted. They can be cooked in a wide variety of ways, like other salmon. Grilling on cedar planks is a favorite for this fish. Broiling, baking, and sauteeing work well.

Description: These are a more mild flavored salmon with a texture and flavor closer to large rainbow trout. They have smaller pin bones so they can be a challenge to work with.
