Alternative Names: Hebi, Shortnose

Monterey Bay Recommendation: Shortbill spearfish caught by Hawaiian fleets with deep-set longlines is a "Good Alternative." The shortbill spearfish population hasn't been assessed in the Pacific Ocean, so the impacts of fishing are unknown. It's caught by fleets that target tuna, and bycatch of sea birds, marine mammals, sea turtles and sharks is a serious concern. However, Hawaiian fisheries have less bycatch because of tougher U.S. regulations.

Uses in Cooking: These will not be specifically recommended in many recipes, but the versatile meat makes a great ceviche. It can be cooked in just about any recipe that calls for fish.

Similar Fish: Mahi-Mahi, Marlin, Yellowtail snapper

Description: This firm steaky meat is as good as Mahi-Mahi and does not have a trace of fishiness. It has a moderate level of oil and a unique flavor that is nutty and buttery.

Fun Facts: The range of this fish is tremendous. They are in almost all of the Pacific and Indian oceans from the southern tip of Africa to the Southern tip of Chile and from the middle of Canada to the middle of Russia, with occasional sightings in the Atlantic ocean.
