Monterey Bay Recommendation: Buy longnose skates caught on the U.S. West Coast. Then look for California and big skates caught on the U.S. West Coast and winter skates caught in the U.S. Atlantic, but know that these sources have environmental issues. Say, "No, thanks" to longnose skates from British Columbia.
Uses in Cooking: These are served as skatewing which is usually dredged in flour and sauteed. I have rarely seen them served any other way.
Similar Fish: Flounder and sole are similar in shape, but Skate is pretty unique and there is no good substitute.
Description: These have an interesting and moderately pronounced flavor that is nutty and creamy, and briny, but not fishy. They have a very high level of collagen so the texture is truly unique and worth a try.
