Uses in Cooking: These are rarely eaten in the US, but are a popular Asian food fish. They are aquacultured in Vietnam and are available in many Asian grocery stores. They do well in stews and curries as well as fried.

Similar Fish: Tilapia, catfish, largemouth bass

Description: This mild fish is nothing special in the kitchen, but is mild and "safe" like a tilapia. The firm, flaky, white meat has no real flavor to speak of.

Fun Facts: This fish was intentionally introduced in many places in the US and has really done a lot of damage, outcompeting more desirable species. You might not go out of your way to buy it, but eating these from the wild in the US is a great way to help solve a real ecological problem.
