Alternative Names: Robalo, Sergeant fish

Monterey Bay Recommendation: No recommendation.  There is not much of a commercial fishery if any, so information is limited.  Recreational fishing regulations create strict limits based on population studies.  If you follow the fishing regulations, this is probably a sustainable choice.

Uses in Cooking: This outstanding fish is similar to a sea bass and can be grilled, sauteed, baked, fried, or used in ceviche.

Similar Fish: Black seabass, Atlantic croaker, Branzino

Description: The meat of this fish is white and firm with low oil content.  It is moderately flavorful.  This fish should not be cooked whole and fillets should be skinless and boneless as the skin can add an off flavor to the meat.

Fun Facts: Snook are highly susceptible to cold temperatures and a cold front can cause a mass die off of the population.   In 2010, as much as 40% of the population were reported to have died as a result of an unusually cold week in Florida.
