Monterey Bay Recommendation: All types of mackerel are best choice or good alternative.

Uses in Cooking: This fish is outstanding deep fried or roasted whole.  The skin has a great flavor and texture with no scales.  The meat stands up well to high heat and does not dry out.

Similar Fish: Sierra Mackerel, Bonito, Amberjack

Description: This fish is not as strongly flavored as the other species of mackerel.  It has a texture more like a well cooked chicken thigh than most fish.  The meat is firm with small tight flakes.

Fun Facts: These aggressive feeders travel in schools and push bait into a ball and then attack it.  They are so shiny that the light reflecting off of them seems to change the water color.
