Starry Flounder

Alternative Names: Sole

Monterey Bay Recommendation: Starry flounder caught on the U.S. West Coast is a "Best Choice" because stock is healthy and the fishery is managed well.

Uses in Cooking: Rarely eaten in the US, it is sometimes canned and exported.

Similar Fish: Rex Sole, Dover Sole, Gulf flounder

Description: These have a decent flavor, but a challenging soft texture that is extremely limiting. These should be baked, but the skin must be removed along with the fatty layer beneath it.

Fun Facts: Unlike other flatfish, the starry flounder is a switch hitter. It can have its eyes on either the left or the right side.
