Uses in Cooking: These are best grilled or fried. They can also be baked, sauteed, or poached. They hold together well even without skin.

Description: The meat of this fish is fantastic. Firm, full flavored, but with minimal fishiness. The meat flakes well with medium to large flakes and long muscle fibers that give it a meaty texture.
Fun Facts: Striped bass are anadromous, meaning they migrate from the sea upriver to spawn. There are some landlocked populations that can no longer move between the rivers and the sea due to the construction of dams. As a result of the success of these populations, many states have begun to stock these fish in landlocked lakes for sportfishing. These fish will still migrate up freshwater streams to spawn, though they are usually less successful.
