Monterey Bay Recommendation: Look for "Best Choice" farmed sturgeon and caviar. White sturgeon from the U.S. Lower Columbia River is a "Good Alternative," but know that this source has environmental issues. Say "No, thanks" to all other wild-caught sturgeon and caviar. Seafood Watch no longer has recommendations for sturgeon or caviar that’s imported from the Caspian or Black Seas because the legal harvest of sturgeon is banned. Therefore, all sturgeon and caviar from the Caspian or Black Seas should be avoided.
Uses in Cooking: Broil, grill, or saute.
Similar Fish: Swordfish or shark may be texturally similar, but sturgeon is unique and there is no good substitute.
Description: These interesting fish have a texture more like a tender pork chop than a typical fish. Their flavor is mild and somewhat like a drink of clean lake water. Raw, the meat is ugly and intimidating, covered in yellow and pink fat, but it is fine to leave it on.
Fun Facts: Sturgeon are among the largest fish on earth, particularly fresh water fish. The largest can reach up to 4000 lbs and 18 feet long.
