Uses in Cooking: These can be sauteed, grilled, broiled, baked, and steamed. These are such an outstanding fish that they should be cooked simply to highlight their flavor qualities.

Description: This meaty fish with huge flakes can have a texture somewhat like a scallop. They are white with moderate flavor that has subtle nutty and buttery notes as well as a nice briney flavor.
Fun Facts: These fish are prolific spawners, producing up to 12 Million eggs at a time, but the hostile environment they live in around Tasmania guarantees that few of these will reach maturity. Given that they are so delicious and so aggressive at feeding time, they are vulnerable to overfishing.
