Monterey Bay Recommendation: Look for walleye caught in Minnesota's Red Lakes. Then look for walleye caught in the Great Lakes (except Lake Superior’s Wisconsin waters), but know that these sources have environmental issues. Say "No, thanks" to walleye caught in Lakes Manitoba, Winnipeg and Winnipegosis, Canada, and Lake Superior’s Wisconsin waters.
Uses in Cooking: Walleye can be baked, fried, sauteed, blackened, or grilled.

Description: These are more flavorful than crappie or bass. They have few bones and are easy to work with. The meat is very firm and flaky. It is pink when raw and cooks to a clean white.
Fun Facts: They Walleye gets its name from the fact that its eyes point straight out to the sides as if it is looking at a wall. The eyes are also special in that they contain a light gathering layer similar to that of lions. This layer allows them to see well in low light conditions.
