Description: The meat of this fish is fantastic. Firm, full flavored, but without a hint of fishiness. The meat flakes well with medium to large flakes and long muscle fibers that give it a meaty texture.
Fun Facts: The white sea bass is not a sea bass at all. It is also not white. They range from bluish grey to olive colored and they are actually a croaker. While no other croakers grow to more than 20 lbs, the white seabass can reach almost 100 lbs.
