Uses in Cooking: These fish need to be treated gently and do not freeze well. Baking or deep frying at moderate temperatures are the only techniques that will not destroy this soft meat.

Description: The meat of this fish is very soft and delicate. If cooked gently it is mild in flavor with small flakes and white meat. If cooked aggressively, it breaks up into mush.

Fun Facts: Male white trout attract mates by gathering in groups and purring.
