Whiting

Alternative Names: Kingcroaker

Monterey Bay Recommendation: No recommendation. No commercial fishery. Not to be confused with many northern cod and hake species sometimes sold as whiting.

Uses in Cooking: These are rarely eaten due to their small size, but they are best pan fried.

Similar Fish: Atlantic Croaker, Speckled trout, Tilapia

Description: These small fish have a mild, but occasionally muddy flavor. The meat is medium firm to soft. They do not freeze well.

Fun Facts: These tough fish can tolerate a wide range of temperature and salinity. In addition, they don't seem to mind getting beat up swimming around in breaking waves near the shore. I have observed these fish staring at me from inside breaking waves.
