Monterey Bay Recommendation: Best choice for hook and line caught in California or Isla Natividad Mexico. Good alternative for all others except those from Japan.

Uses in Cooking: Almost always grilled or served as sashimi.

Description: These fish have a high fat content and a buttery mild flavor. They have very firm steaky meat.

Fun Facts: These fish occasionally rub against sharks, using their rough skin like a loofah to remove parasites.
