Red Snapper
Alternative Names: American Red Snapper, Mexican Snapper, Caribbean Snapper
Monterey Bay Recommendation: Good alternative from US Gulf of Mexico. Avoid others.
Uses in Cooking: This versatile fish can be baked, broiled, grilled, steamed, sauteed, poached, or deep fried. The most traditional red snapper preparation is grilled whole with plenty of spices.
Similar Fish: Vermillion snapper, yellowtail snapper, striped bass
Description: Red snapper is considered by many to be the best snapper if not the best fish available. The sweet, moist, white flesh of this fish is firm and forgiving to cooks.
Fun Facts: Red Snapper is so highly regarded that the name is attached to many other types of fish. Unscrupulous dealers and restuarants will often substitute cheaper fish. I recommend buying these fish whole to be sure you are getting the real thing.
