SIMPLE SHRIMP SCAMPI

There are a million recipes out there for shrimp scampi. It is a super popular dish that is pretty easy to make and everyone loves shrimp. This recipe is not that special, except that it is. There is not a lot you can do to make this dish special, but it is just perfect in its simplicity. When well executed, there is nothing better. So be careful to cook your shrimp perfectly and remember that slightly under cooked is way better than slightly overcooked. Don’t crowd your pan. This dish is quick enough to make a couple batches if you need to. Enjoy these over some fettuccine or linguine or all alone.
INGREDIENTS:
1 lb Large shrimp – peeled
¼ Cup Olive oil
¼ Cup Butter
½ teaspoon Red pepper flakes
4 Cloves Garlic
Zest of 1 lemon
Juice of 1 lemon
2 Tablespoons chopped parsley
Salt to taste
Heat the olive oil and butter in a big skillet. Add the red pepper flakes and garlic and sauté over medium high heat for 3 minutes. Reduce the heat if the garlic starts to burn. Add the shrimp and cook until done. They are done when they are pink and firm. It should take around 4 minutes, but can vary based on size and temperature. When the shrimp are done, remove from heat and add the lemon zest, lemon juice, parsley, and salt. Toss to coat and serve immediately.
